  • 3 pounds boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (8 ounce) block cream cheese, cut into cubes
  • 1 (1 ounce) package taco seasoning mix
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Optional toppings: Shredded cheddar cheese, sour cream, avocado, tortilla strips

Instructions

  1. Place the chicken breasts or thighs into the basin of your slow cooker.
  2. Pour the chicken broth over the chicken.
  3. Add the drained black beans, drained corn, Ro-Tel, cream of chicken soup, taco seasoning, cumin, and chili powder to the slow cooker. Do not add the cream cheese yet.
  4. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and shreds easily.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. Add the cubed cream cheese to the soup. Stir gently until the cream cheese has completely melted and the soup is creamy.
  7. Stir everything together until well combined. Let it heat through for about 10 minutes if needed.
  8. Serve hot with your favorite toppings like shredded cheese, sour cream, and tortilla strips.

  • For a thicker soup, remove about 1 cup of the liquid before adding the cream cheese, mix in 1 tablespoon of cornstarch, and then stir the mixture back into the soup until it thickens.
  • If you prefer a less creamy texture, reduce the amount of cream cheese or omit it entirely.
