  • 1 pound spinach feta chicken sausage, sliced
  • 12 ounces penne or rotini pasta
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced chicken sausage and cook until browned on both sides, about 5 to 7 minutes. Remove the sausage and set it aside.
  2. Add the minced garlic to the same skillet and cook for 1 minute until fragrant. Do not let it burn.
  3. Pour in the chicken broth, heavy whipping cream, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Add the dry pasta to the simmering liquid. Stir well to make sure the pasta is submerged.
  5. Cover the skillet and reduce the heat to medium-low. Cook for 12 to 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed, creating a thick sauce.
  6. Stir in the cooked chicken sausage and fresh spinach. Cook for 2 more minutes until the spinach wilts.
  7. Remove the skillet from the heat. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  8. Serve immediately, topping each portion with extra grated Parmesan cheese.

Notes

  • For a richer flavor, use smoked chicken sausage instead of spinach feta.
  • If the sauce seems too thick after adding the cheese, add a splash of reserved pasta water or milk to reach your desired consistency.
  • This recipe works well with other vegetables like chopped broccoli florets; add them when you add the pasta and broth, cooking until tender.
