  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook out the raw flour taste. This creates the roux.
  4. Slowly whisk in the chicken broth until the mixture is smooth and there are no lumps.
  5. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a simmer and cook until the broth thickens slightly, about 5 minutes.
  6. Reduce the heat to low. Stir in the heavy cream, shredded chicken, and uncooked gnocchi.
  7. Simmer gently, stirring occasionally, until the gnocchi float to the top and are cooked through, about 3 to 5 minutes. Do not boil once the cream is added.
  8. Stir in the fresh spinach until it wilts into the soup, about 1 minute.
  9. Taste and adjust seasoning if needed before serving hot.

Notes

  • For a quicker version, use pre-cooked rotisserie chicken.
  • You can substitute kale for spinach if you prefer a heartier green.
  • This soup is best eaten the day it is made, as gnocchi can absorb too much liquid upon standing.
