  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 cup sliced mushrooms (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup crushed butter crackers (for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the wild rice blend according to package directions. Drain any excess water.
  3. In a large bowl, combine the cooked wild rice, shredded chicken, cream of chicken soup, cream of mushroom soup, chicken broth, milk, onion powder, and thyme. Mix well.
  4. Stir in the chopped celery, chopped onion, and mushrooms, if you are using them.
  5. Spread the mixture evenly into the prepared baking dish. Sprinkle the shredded cheddar cheese over the top.
  6. In a small bowl, mix the crushed butter crackers with the melted butter. Sprinkle this mixture evenly over the cheese layer.
  7. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 minutes to the baking time if baking directly from the refrigerator.
  • You can substitute cooked, diced turkey for the chicken if you have leftovers.
  • If you want a richer flavor, use homemade cream of chicken soup instead of canned.
