Make this hearty cheeseburger soup in your slow cooker for an easy, comforting weeknight dinner. It captures all the rich, cheesy flavor of a classic burger in a warm bowl.

  • 1.5 lbs ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 large potatoes, peeled and diced
  • 1 teaspoon dried mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/2 cup milk or half-and-half
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • Optional toppings: bacon bits, chopped chives, extra cheddar cheese

Instructions

  1. Place the ground beef, chopped onion, and minced garlic into your slow cooker. Cook on high for 1 to 1.5 hours, or until the beef is fully browned. Drain off any excess grease.
  2. Stir in the beef broth, diced potatoes, dried mustard powder, salt, and pepper into the slow cooker.
  3. Cover and cook on low for 5 to 6 hours, or on high for 2.5 to 3 hours, until the potatoes are tender.
  4. In a small bowl, whisk together the flour and milk until smooth. Pour this mixture into the slow cooker and stir well.
  5. Continue cooking on high for 15 to 20 minutes, stirring occasionally, until the soup has thickened slightly.
  6. Reduce the heat to the ‘Keep Warm’ setting. Stir in the shredded cheddar cheese until it melts completely and the soup is creamy.
  7. Remove the soup from the heat. Stir in the sour cream until fully incorporated. Do not boil the soup after adding the sour cream.
  8. Serve hot with your favorite toppings like bacon bits or extra cheddar cheese.

Notes

  • For a richer flavor, add 4 slices of cooked, crumbled bacon when you add the beef broth.
  • If you do not have a slow cooker, you can brown the beef and sauté the onions in a large pot on the stove. Add the remaining ingredients and simmer until potatoes are tender, then proceed with thickening steps.
  • Shred your own cheddar cheese for the best melting results; pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
