  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a separate large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until combined.
  4. Beat in the eggs one at a time until fully incorporated into the sugar and oil mixture.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the grated carrots and optional nuts using a spatula.
  7. Spread the batter evenly into the prepared 9×13 inch pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the carrot cake bars cool completely in the pan on a wire rack. This cooling step is important before frosting.
  10. To make the cream cheese frosting, beat the softened cream cheese and butter together in a medium bowl until smooth and creamy.
  11. Gradually add the sifted powdered sugar, mixing until fully incorporated. Beat in the vanilla extract.
  12. Once the bars are completely cool, spread the cream cheese frosting evenly over the top.
  13. Cut into squares and serve. These are excellent make ahead dessert bars.
