  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1/4 cup grated Gruyère cheese (optional, for extra richness)

Instructions

  1. Combine the sliced onions, butter, and olive oil in a large, heavy-bottomed skillet or Dutch oven. Cook over medium-low heat, stirring occasionally, for 30 to 45 minutes until the onions are deep golden brown and sweet. Do not rush this step; slow caramelization builds flavor.
  2. Stir in the salt, pepper, and thyme during the last 5 minutes of cooking. Remove the onions from the heat and let them cool slightly.
  3. In a medium bowl, beat the softened cream cheese until smooth.
  4. Add the sour cream, mayonnaise, and minced garlic to the cream cheese. Mix until just combined.
  5. Fold the cooled caramelized onions and the optional Gruyère cheese into the cream cheese mixture. Mix gently until everything is evenly distributed.
  6. Taste the dip and adjust salt and pepper as needed.
  7. For the best flavor, cover the dip and chill in the refrigerator for at least 2 hours before serving. This allows the flavors to meld.
  8. Serve this gourmet chip dip cold with crackers, chips, or fresh vegetables.
