Make these irresistible, no-bake Caramel Ritz Cracker Christmas Cookies for a perfect sweet and salty holiday treat. They combine buttery crackers, gooey caramel, and chocolate for an easy favorite.

  • 1 sleeve (about 36) Ritz Crackers
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips (optional, for topping)
  • 1/4 cup chopped pecans or peanuts (optional)
  • Festive sprinkles (optional)

Instructions

  1. Line a baking sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared sheet.
  2. In a medium saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter melts and the sugar dissolves. Bring the mixture to a boil and let it boil for exactly one minute without stirring.
  3. Remove the saucepan from the heat immediately and stir in the vanilla extract.
  4. Pour the hot caramel mixture evenly over the layer of Ritz crackers, spreading quickly to coat them.
  5. Bake the crackers with caramel in a preheated 350°F oven for 5 minutes. The caramel will bubble.
  6. Remove the sheet from the oven. Immediately sprinkle the chocolate chips evenly over the hot caramel layer. Let stand for 5 minutes to soften the chips.
  7. Gently spread the softened chocolate chips into an even layer using an offset spatula. If using, sprinkle with chopped nuts or festive sprinkles now.
  8. Allow the cookies to cool completely at room temperature, or place them in the refrigerator for 30 minutes until the chocolate is set.
  9. Once firm, break the sheet into individual Caramel Ritz Cracker Christmas Cookies. Store them in an airtight container.

Notes

  • For a Twix Style Holiday Cookie, use milk chocolate chips for the base layer and drizzle with melted dark chocolate after setting.
  • If you want a richer caramel flavor, use dark brown sugar instead of light brown sugar.
  • These are excellent for cookie exchange favorites because they hold up well.
