3 lbs Yukon Gold potatoes, peeled and quartered
1 cup heavy cream
4 tablespoons salted butter
5.2 oz container Boursin Garlic & Fine Herbs Cheese, softened
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Instructions
Place the quartered potatoes in a large pot and cover them with cold, salted water.
Bring the water to a boil over high heat, then reduce heat to maintain a steady simmer. Cook until the potatoes are fork-tender, about 15 to 20 minutes.
Drain the potatoes completely. Return the drained potatoes to the hot, empty pot to allow any remaining moisture to evaporate for about one minute.
While the potatoes are draining, warm the heavy cream and butter in a small saucepan over medium-low heat until the butter is melted. Do not boil the cream mixture.
Remove the pot from the heat. Add the softened Boursin cheese to the potatoes.
Using a potato masher or a hand mixer on low speed, begin mashing the potatoes.
Gradually pour in the warm cream and butter mixture while continuing to mash or mix until the potatoes reach your desired creamy consistency. Avoid overmixing to keep them light.
Stir in the salt and pepper. Taste and adjust seasoning as needed.
Serve these gourmet mashed potatoes immediately as an elevated side dish.
