Make this classic Italian cocktail, the Peach Bellini, using fresh peach puree and chilled Prosecco. It is a simple, elegant, and refreshing drink perfect for brunch or celebrations.

  • 1/2 cup fresh peach puree (or high-quality canned/jarred peach puree)
  • 3 ounces chilled Prosecco or dry sparkling wine
  • 1 small peach slice, for garnish

Instructions

  1. Prepare the peach puree if using fresh peaches. Peel and pit ripe peaches, then blend them until smooth. Strain the puree through a fine-mesh sieve to remove excess pulp for a smoother texture.
  2. Chill your champagne flutes thoroughly before starting.
  3. Pour 1/2 cup of the peach puree into each chilled flute.
  4. Slowly top the puree with 3 ounces of cold Prosecco. Pour gently to maintain the bubbles.
  5. Garnish each Peach Bellini with a thin slice of fresh peach placed on the rim of the glass.
  6. Serve immediately.

  • For a quick version, substitute the fresh puree with 1 ounce of peach nectar and 2 ounces of Prosecco.
  • To make a Strawberry Bellini, substitute the peach puree with fresh strawberry puree.
