Instructions

  1. Place the ripe bananas, rolled oats, and eggs into a blender. Add baking powder now if you are using it.
  2. Blend the mixture until it is completely smooth. This may take 30 to 60 seconds, depending on your blender. The batter should resemble thick pancake batter.
  3. Let the batter rest on the counter for 5 to 10 minutes. This step allows the oats to absorb moisture, which helps create a fluffier pancake.
  4. Heat a non-stick griddle or large skillet over medium heat. Lightly coat the surface with cooking spray or butter.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2 to 3 minutes per side. You will see bubbles form on the surface, and the edges will look set when it is time to flip.
