Learn the simple method for baking brie cheese until it is perfectly molten and gooey inside. This guide includes easy instructions for both sweet and savory topping combinations, making it an elegant and crowd-pleasing holiday cheese appetizer.

Ingredients

Scale
  • 1 wheel (8 ounce) brie cheese, full fat
  • 2 tablespoons fig jam or cranberry sauce
  • 1 tablespoon honey
  • 1/4 cup chopped pecans or walnuts
  • 1 teaspoon fresh thyme leaves (optional, for savory topping)
  • 1 clove garlic, minced (optional, for savory topping)
  • 1 sheet puff pastry (optional, for Brie en Croute)
  • Crackers, sliced baguette, or fresh fruit, for serving

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Prepare a small baking dish or line a baking sheet with parchment paper.
  2. If using puff pastry, unroll the pastry sheet on a lightly floured surface. Place the brie wheel in the center. Bring the edges of the pastry up and over the brie, sealing the seams to fully enclose the cheese. Place the wrapped brie seam-side down on the prepared baking dish. If skipping pastry, place the unwrapped brie wheel directly onto the baking dish.
  3. Score the top rind of the brie wheel in a crosshatch pattern, cutting about 1/8 inch deep. This helps the cheese melt evenly.
  4. Prepare your topping. For a sweet topping, mix the jam and honey. For a savory topping, mix the minced garlic and thyme with a drizzle of honey.
  5. Spoon your chosen topping mixture evenly over the scored top of the brie. If using nuts, sprinkle them over the topping.
  6. Bake for 10 to 15 minutes. The cheese is done when the top is lightly golden and the center is soft and melted when gently pressed. If using puff pastry, bake until the pastry is golden brown, usually 15-20 minutes.
  7. Remove the baked brie from the oven. Let it rest for 5 minutes before serving.
  8. Serve immediately with crackers, baguette slices, or fruit for dipping. This warm cheese dip for parties is best enjoyed right away.

Notes

  • For a truly gourmet appetizer, wrap the brie in puff pastry (Brie en Croute) before baking. Chill the wrapped brie for 15 minutes before baking to help the pastry stay crisp.
  • If you want a very quick party food option, skip the pastry and simply top the brie with your favorite jam and bake for 10 minutes.
  • Pair this elegant appetizer with a crisp white wine or a light-bodied red wine.
