  • 1 cup heavy whipping cream
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 2 cups chocolate sandwich cookies (like Oreos), crushed
  • 1 cup chocolate cake cubes or brownies, crumbled (optional for extra richness)
  • Extra Baileys or chocolate syrup for drizzling (optional)

Instructions

  1. Prepare the crust layer: Combine the crushed chocolate sandwich cookies with 2 tablespoons of melted butter (if using, otherwise use dry crumbs). Press half of the cookie mixture into the bottom of a large trifle bowl or individual serving glasses.
  2. Make the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture. Fold in 1/4 cup of the Baileys Irish Cream. Spread half of this cheesecake mixture over the cookie base.
  3. Prepare the pudding layer: Whisk the instant chocolate pudding mix, cold milk, and the remaining 1/4 cup of Baileys Irish Cream until thickened, about 2 minutes. Gently fold in half of the thawed whipped topping. Spoon this mixture over the first cheesecake layer.
  4. Add the next cookie layer: Sprinkle half of the remaining crushed cookies (and cake/brownie crumbles, if using) over the pudding layer.
  5. Repeat the layers: Spread the remaining cheesecake mixture over the cookies. Top with the remaining cookie/cake crumbles.
  6. Finish the top layer: Gently spread the remaining thawed whipped topping over the top layer of cookies. If desired, drizzle with extra Baileys or chocolate syrup.
  7. Chill: Cover the trifle and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set completely. Serve cold.
