  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon for the cake batter. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the batter is smooth. Do not overmix.
  6. Gently fold in the diced apples.
  7. Prepare the streusel: In a small bowl, combine the flour, brown sugar, and cinnamon for the topping. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Spread half of the cake batter into the prepared pan. Sprinkle half of the streusel topping evenly over the batter.
  9. Spoon the remaining batter over the streusel layer. Top with the remaining streusel mixture.
  10. Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
  11. Let the cake cool in the pan on a wire rack for at least 20 minutes before slicing and serving warm.

Notes

  • For extra moisture, use Greek yogurt instead of sour cream in the batter.
  • Toss the diced apples lightly in 1 teaspoon of flour before folding them into the batter to prevent sinking.
  • If you prefer a sweeter finish, you can drizzle the cooled cake with a simple glaze made from powdered sugar and milk.
