  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and trim the ends of the zucchini. Cut the zucchini lengthwise into sticks, similar to french fries.
  2. Place the zucchini sticks in a colander. Sprinkle with 1/4 teaspoon of salt and let them sit for 15 minutes. This draws out excess moisture, helping them crisp up.
  3. Pat the zucchini sticks completely dry using paper towels. This step is important for achieving a crispy texture.
  4. In a medium bowl, toss the dried zucchini sticks with olive oil until lightly coated.
  5. In a separate small bowl, mix the grated Parmesan cheese, garlic powder, remaining salt, and black pepper.
  6. Sprinkle the Parmesan mixture over the oiled zucchini and toss gently until the cheese adheres to the sticks.
  7. Preheat your air fryer to 380°F (195°C).
  8. Place the zucchini fries in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
  9. Air fry for 8 to 12 minutes, shaking the basket halfway through the cooking time, until the zucchini is golden brown and crispy.
  10. Serve immediately as a healthy snack or side dish.

  • For an extra crispy result, you can lightly spray the fries with cooking spray before adding the Parmesan mixture.
  • If you want a vegan air fryer zucchini option, omit the Parmesan cheese and use 1 teaspoon of nutritional yeast mixed with the spices.
