Make the best air fryer baked potatoes with crispy skin and a fluffy interior. This quick, hands-off method is ideal for busy weeknights or freeing up oven space during holidays.

  • 4 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper

Instructions

  1. Scrub the potatoes well under running water. Dry them completely with a paper towel.
  2. Use a fork to pierce each potato deeply 6 to 8 times all over. This allows steam to escape.
  3. Rub the entire surface of each potato with olive oil.
  4. Sprinkle the coarse salt and black pepper evenly over the oiled skin.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the seasoned potatoes in a single layer in the air fryer basket. Do not overcrowd the basket; cook in batches if necessary.
  7. Air fry for 35 to 45 minutes, flipping the potatoes halfway through the cooking time. The exact time depends on the size of your potatoes and your air fryer model.
  8. Check for doneness by inserting a fork into the center; it should slide in easily. The skin should be visibly crispy.
  9. Remove from the air fryer and let them rest for 5 minutes before slicing open lengthwise. Fluff the interior with a fork.

Notes

  • For extra crispy skin, you can lightly brush the potatoes with oil again halfway through cooking.
  • These potatoes are perfect for turning into a main dish with toppings like shredded cheddar cheese, crumbled bacon, and a dollop of sour cream.
  • If you need to reheat leftovers, place them back in the air fryer at 375°F (190°C) for 5 minutes.
